With the arrival of Office 2019, the way the aforementioned software is installed has changed.
Before running the installer, it is necessary to uninstall the previous version of Office and dependent programmes such as Visio or Project. This can be done manually or by adding an entry in the configuration.xml file:

The installer currently runs in "Click-to-Run" mode and the process itself consists of downloading the Office Deployment Tool.
After unzipping, run the command: setup.exe /configure configuration.xml where: configuration.xml is a properly prepared file with the configuration of Office 2019.
